I love caviar. The first time I tried it was at the Tea Room at the Huntington Library. So as I came across “Print this Veggie-Food at Home” by Abigail Klien Leichman, the words green like caviar definitely caught my attention.

Have you heard of khai-nam? It is a vegetable considered to be the smallest flowering plant and the fastest growing vegetable in South East Asia. It has grown in Indochina and has been consumed in Thailand, Myanmar and Laos. It is also considered to be a complicated vegetable to grow. The nutritional profile has been described as combining kale, broccoli and spinach with the taste of sweet cabbage with no smell.

There has been a new way to use this unique vegetable of late. GreenOnyx is a machine to grow and process Khai-nam right at your own kitchen. You would be able to use this for smoothies, soups, stews and salads.

It is considered very healthy and convenient. It is definitely very different but I would not mind giving this a try. Sounds pretty tasty and refreshing. It would be fun to play around with this vegetable and create some light and healthy dishes.
