Best Snack Find: Cacao Energy Balls

I’m all about quick and easy healthy snacks; who isn’t? I’ve discovered these compact and delicious, power-packed protein bites that I call “cacao energy balls”. A friend of mine in Australia made these for me when I was speaking there last November and I have been in love with them ever since. I’ve seen variations of energy balls flying around on Instagram for some time, and though I haven’t tried many other recipes, I just love these ones. Why change a good thing? All of the ingredients packed into these small balls are nutritiously beneficial and add to a good little protein source for pre or post workout snacks or easy on-the-go energy. These are packed with healthy fat, protein, iron, and fiber, and will leave you feeling satisfied. They are so super tasty that you (or your kids or husband) won’t even know you’re eating a healthy snack! My husband loves these little raw vegan balls. He’s my ultimate taste-tester- when he likes something I know it’s worth a post! I’d like to share this super easy and quick-to-make recipe with you:

Add all these ingredients to the food processor:

1 tbsp coconut oil
1 tbsp peanut butter
3 tbsp cacao powder
1 cup pitted dates
¼ cup quinoa flakes
¼ cup whole quinoa seeds
1 tbsp (optional) oats

1. Simply process well so that the mixture becomes crumbly and well mixed.
2. Take a small handful in the palm of your hand and roll into a ball. The dates produce a texture and stickiness that holds all the ingredients together.
3. Roll each ball in shredded coconut, goji berries, or any coating of your choice and place in a container to store.
4. Refrigerate to set (although they are perfectly fine to pop into your mouth and enjoy immediately after rolling, if you choose to do so!)
5. Pop in your purse or car and enjoy cooled before or after a workout or when in need of a quick snack or energy boost!

(Makes approximately 14-16 small balls)
